Top 3 essential ingredients in French cooking? Top 3 essential ingredients in my version of French cooking would be - butter, salt and lots of Foie gras.
Favorite food and wine pairing? Roast chicken and Sherry.
Must have herbs or spice in your pantry? Chinese long pepper.
Ingredient you can’t stand? I hate beets. I cannot stand them.
Best food memory from your childhood? Rognons de veau in cognac and cream. In Paris, first trip!

Last meal on earth? My last meal on earth would be a mix of two things I love the most, French cuisine and Chinese cuisine. So I would start with a Foie Gras Terrine and I would end with a lobster cooked Chinese style with ginger and scallions.
