The 4lb Texas-style prime angus beef brisket is marinated in salt, pepper, and chile rub, and then smoked for 20 hours over cherry and oak woods. But what’s a classic BBQ meal without a vast assortment of side dishes? Hirschberg and Wise’s brisket will be accompanied by Colicchio’s famous pork baked beans, braised farmer market greens (sourced directly from the Union Square Greenmarket), and watermelon salad.
