Eden partnered with by Chloe Founder Samantha Wasser to open DEZ, a Middle Eastern fast-casual restaurant in NYC, in May 2018. The restaurant features a seasonal menu inspired by Eden’s Israeli heritage and travels throughout the Middle East.
We sat down with Eden to talk about her busy schedule and how she manages it all.
What's it like being a restaurant owner in NYC?
Eden Grinshpan: Extremely challenging since there is such incredible competition, but very rewarding to share food that means so much to me with all my New Yorkers!
What's been the hardest part about DEZ? What's been the easiest?
EG: The hardest part has been the amount of energy it requires to be at the restaurant making sure each dish is executed to my liking, while also balancing my other projects and motherhood.
The easiest part has been surrounding myself with great people who help me get all my work done and share my same vision.
How do you juggle being a mom and working full time?
EG: I really dedicate my weekends to my family and when home I try to avoid my phone...as much as possible.
What are some of your favorite other spots to eat in NYC?
EG: Misi, Lucien, abcV, Buvette, & Taverna Kyclades!
What are you most excited about for 2019?
EG: I have a lot of exciting projects for 2019! Another season of Top Chef Canada is coming out, and a lot of great brand collaborations in the works. I'm about to go to Israel for an exciting trip with some of my favorite culinary idols called #CelebrityChefBirthright. I'm also looking forward to traveling more with my fam-bam.
