The long-awaited Grayson Hotel, a member of Hyatt’s world-class Unbound Collection, finally opened its doors, and the results prove to be well worth the wait.
Located near Bryant Park, all 296 rooms in the gorgeous new-build hotel pay homage to turn-of-the-century NYC through drool-worthy industrial-chic design, with the majority of rooms delivering views of city icons such as the Empire State Building, Freedom Tower, New Year’s Eve Ball Drop and more. A collection of artwork curated by Indie Walls adorns the guest rooms, with each piece highlighting beloved historical sites in the city. Italian Marcello Pozzi of MarceLLO Pozzi architecture & design (MLLO) is credited with the design and architecture. Vintage books and objects that represent the Grayson Hotel fully immerse guests in the story of the hotel, with the design expertly melding juxtaposing elements of the raw and refined. Pozzi contrasts steel and glass with lacquered wood, rattan and gold accents for an atmosphere that fully encompasses all that New York has to offer. For an even more upscale experience, three interconnecting suites on the fourth floor offer private balconies with unfettered views of landmarks both old and new.
The industrial and historic elements carry throughout the hotel, with concrete ceilings and detailed millwork on display high and low. From the moment you enter the lobby, the two-story steel spiral staircase connecting the street level with the second-floor indoor-outdoor dining destination transports you to an urban oasis. Guests are welcome to continue the luxury experience in the 24-hour fitness center, GRIT, which features fitness staples such as SoulCycle commercial bikes, TRX treadmills, a StairMaster HIIT machine, dumbbells, cross trainers and more. Guests also have access to Oasis Day Spa, located just minutes from the hotel.
As is true of any top-tier NYC hotel, the Grayson Hotel’s culinary offerings are unmatched, as acclaimed New York City-based hospitality company Apicii will open multiple dining experiences at the hotel. Apicii is helmed by founder and CEO Tom Dillon and led by chief culinary officer Jonathan Benno of Michelin-starred restaurant Benno and beverage director Kyle Tran. Mediterranean and Mexican cuisines will be on display, bolstered by the team’s extensive travels and long relationships with culinary pioneers, distillers and craftsmen.
Sitting on the ground floor, Harta will offer a pan-Mediterranean menu curated by chef Jonathan Benno and executive chef Mark Zuckerman. Expect dishes such as artichokes with red kuri squash and rainbow carrots, brodetto with a variety of seafood in a tomato-saffron broth and black bass with artichokes, fennel, radish and vadouvan broth. The wine list comprised of Old and New World wines promises to impress. Upstairs on the second floor, Bar Harta will provide a casual sister space serving wine and tapas on a delightful patio.
Floating above the city on the 28th floor sits Bar Cima, an intimate indoor-outdoor rooftop space with sprawling views from the Empire State Building to the East and Hudson Rivers. Walnut and brass-adorned doors evoke polished Mexican luxury, and the lounge area’s jewel-toned velvet seating and custom stone tables featuring ornately carved bases feel like a refuge from the city’s bustle. The antique mirrored ceiling reflects the expansive mezcal and tequila collection, which will be complemented by the property’s taco garden, Tacalle, expected to open come spring. Dillon, the mastermind behind some of the nation’s finest Mexican restaurants, conceptualized both spaces.
