Sous Vide, which translates to “under vacuum” in French, is being celebrated internationally on January 26—but, what exactly is Sous Vide?
Sous Vide is the process of vacuum-sealing food in a bag and cooking it in a bath of water set to a precise temperature. Why cook your food this way? It allows meats to cook with relative uniformity, meaning you won't have an overcooked crust with an overly-rare inside, and it’s become increasingly popular with professional and at-home chefs alike.
Cuisine Solutions Inc., an international food company that specializes in sous vide tools and techniques, wants to help you celebrate International Sous Vide Day by hosting a free virtual celebration. The event also celebrates the 80th birthday of the “Father of Sous Vide” himself, Dr. Bruno Goussault.
Hosted by Cuisine Solutions’ Chief Strategy Officer Gerard Bertholon, the virtual event will teach guests about the evolution of sous vide cooking through a series of cooking and recipe demonstrations.
Daniel Boulud, the acclaimed restaurateur behind the eponymous restaurant Daniel which has earned two Michelin stars, will be on hand to lead some of these, as will Scott Randolph, the Interim VP of Culinary Development at IHOP, and others.
Guests will also have the opportunity to recreate some of the recipes at home, including Chef Boulud’s glazed pork belly with beluga lentil ragout, root vegetables and mustard jus.
The event will finish with a virtual happy birthday message to Dr. Goussault, who currently serves as the Chief Scientist at Cuisine Solutions. Not only is he the “Father of Sous Vide,” he is also the founder of the Culinary Research and Education Academy.
At CREA, he taught the application of sous vide cooking to Michelin-starred chefs such as Thomas Keller, Daniel Boulud, Yannick Alléno, Joël Robuchon and Anne-Sophie Pic. Since its inception, CREA and Dr. Goussault have trained more than 80 percent of the current three-star Michelin chefs around the world.
